Roasted Rainbow Cauliflower: A Simple, Delicious Side Dish

Cruciferous vegetables are hot right now. Lol. Not a sentence I ever thought I would say. But seriously, go to any trendy restaurant and you will see brussel sprouts, cauliflower, broccoli and kale as stars of the menu. Twenty years ago these were the worst, yuck inducing options of the vegetable world. Luckily we have evolved and are now embracing these vegetable powerhouses packed with vitamins, minerals, and antioxidents. This simple side dish is delicious and will be sure to create some cauliflower love in your house!

This recipe for Roasted Organic Rainbow Cauliflower is SUPER easy, quick and looks fabulous. I am serious when I say it is so easy, I debated about actually writing this because it is so minimal. However, this version is such a hit in my house that I had to share. Try to find the rainbow cauliflower. Not only does it contain more nutrients than white, it is just fun to My three children literally devour them. They love the bright colors and usually dip these in dairy-free ranch (Tessemae’s is our favorite for sure).

Organic Rainbow Cauliflower

What You Need:

  • Two large heads of Organic Rainbow Cauliflower
  • Olive or Avocado Oil
  • Sea Salt (or salt of your choice)
  • Garlic Powder

Steps For Roasted Rainbow Cauliflower Goodness:

1. Preheat oven to 400

2. Cut up, rinse and dry cauliflower.

3. Spread evenly onto baking sheet. Unlined is best (can use parchment if needed)

4. Coat with either Olive Oil or Avocado Oil. Be generous and toss to disperse evenly. Avocado oil has a higher smoke point. Olive Oil has a smoke point of 410 so if your oven is off at all, you are getting close with this recipe.

5. Sprinkle salt and garlic powder

6. Roast 20-25 minutes or until beginning to soften and crisp. Stir around about half way through.

7. Enjoy! Great dipped in dairy-free ranch, hummus or enjoyed alone.

As a mother of a child with a food dye issue, the recent attention is something that we have been waiting for for years. On one hand, it’s amazing to see this topic gaining clout in the mainstream media and for people to actually take it seriously. However, the sudden interest and validation because of mainstream media is also frustrating. I can’t tell you how many times over the years there have been negative comments, snide remarks, eye rolls over this topic when I have discussed the issue that we deal with firsthand. This is a great opportunity to learn more and make really easy changes in your life that could be very impactful to the health of your family.

Grandma and Grandpa went to France and brought the Grandma and Grandpa went to France and brought the kids all kinds of fun candies. The ingredients are amazing. Real. And despite the fun , colorful candies- there isn’t a drop of artificial color in sight. Because in Europe that would require a warning label. But not here. The nastier, more manufactured, more side effects the better. Make it make sense 🤦‍♀️

Items on the Dirty Dozen list have the highest levels of pesticides and should be bought in organic quantities. The Clean 15 are items that tend to have lower levels of pesticides and conventional options are ok when organic isn’t available.

What do you think of this year’s lists?

Realistic healthy lunch for a Kindergartener who d Realistic healthy lunch for a Kindergartener who doesn’t eat sandwiches, is on a protein strike and is generally having a super picky phase 😜

@planetbox makes it easy to see everything in his lunch. No rummaging through a lunch bag to figure out what’s being served. Keeping it 100% organic makes it healthier right off the bat. Packing in the organic berries and cucumbers ( notice the 1 mini carrot 😄) because those always are eaten. Found organic corn chips at @wholefoods, a @madegoodfoods bar, small box of raisins & almonds (good fats and fill him up). Every lunch needs a treat and these mini @hersheys organic bars are the perfect option.

Until we move past this “selective” phase at least these are filling, wholesome foods that he will actually eat. You can send all the fancy foods you’d like in a lunchbox but if they don’t eat them no one wins.
