Last year for Valentine’s Day, I wanted to make the Hubs something special. I needed something that fit with our dietary restrictions but was still delicious and a treat. Because of this, it had to be dairy free, able to be made with organic ingredients and not contain a ton of sugar. I found a bunch of recipes and took the best parts from each to create this recipe for Organic Dairy Free Chocolate Donuts.
Full disclosure, I am not a baker. Not at all. Even a little bit. I love to cook! I enjoy tasting and throwing a little of this and a little of that together to create something amazing. The precise requirements of baking get in the way of the fun. Fingers crossed, I gave it a shot. They were amazing! I was told that it was the best thing I have ever baked.
Most importantly, these were honestly so easy to make. I’ve since made these many times and they are a fan favorite time and time again. A little tip I’ve learned; if you put anything in a donut pan it suddenly becomes a lot more fun. I’ve done it with all kinds of muffin recipes and it’s an instant crowd pleaser.
Recipe: I was able to find all organic ingredients, mostly at Whole Foods. I will not keep indicating “organic” with each entry.
What you need…
1 Egg
¾ cup Flour
⅓ cup unsweetened Cocoa Powder ¼ cup Cane Sugar
½ tsp baking powder (get aluminum free)
¼ tsp baking soda
¼ tsp salt
½ cup almond milk (check your labels)
3 tbsp melted coconut oil (I use refined to avoid coconut flavor)
1 tsp real vanilla extract
For Glaze:
3/4 cup powdered sugar
2-3 tbsp almond milk
1 tbsp dairy free butter
Time to make the donuts:
1 . First, preheat oven to 375
2. Next, lightly grease donut pan with coconut oil
3. In a large bowl whisk flour, cocoa, baking powder, baking soda, salt and cane sugar
4. In a small bowl mix milk, melted coconut oil, and vanilla. Add in egg.
5. Then, pour wet ingredients into dry ingredients and mix constantly. Continue to mix until combined.
6. Now here is where I got fancy: Use a large Ziploc as a piping bag (unless you have a piping bag? In which case you really are fancy) and fill donut pan about ¾ of the way full.
7. Bake for about 10 minutes
8. Let pan sit for a few minutes before removing donuts. Then let donuts cool 10-15 minutes before glazing (mix glaze while they cool)
9. Finally, mix glaze ingredients together and dip both sides of donut. Place on cooling rack where you can drizzle a second coat of glaze (if you would like). Let sit for about 30 minutes to allow glaze to slightly harden.
