No Bake Cookie Truffles (Dairy Free Option)

I’ve said it before and I’ll say it again. I am not a baker. I love to cook, but baking is another story. But, I’ll try now and again. This recipe has always been one of my go-to’s, as it is no-bake. In the past, I’d use that famous brand of sandwich cookies and conventional dairy products. I’ve now revamped the recipe to include organic ingredients, healthier choices and even a dairy-free option. While I would not consider these No Bake Cookie Truffles to be health food, they are a better option that taste amazing!

I was recently invited to take part in a cookie exchange and needed something I knew I could make. However, I wanted to bring something that was at least attempting to be a healthier option. I knew it had to taste great and be simple. So I just did an easy swap of ingredients. I switched out those mainstream chocolate sandwich cookies for the Whole Foods 365 version. My version has less sugar and does not contain high fructose corn syrup. An even better option would have been to find an organic version of the cookies (which I know does exist). But I was able to go organic on the second (of three) ingredients and use organic cream cheese. For me, having organic dairy was more of a priority.

Additionally, I wanted to try a dairy free option. As a family, we don’t do much dairy and I wanted a cookie we could enjoy. We love Kite Hill Cream Cheese so I decided to give it a shot. I made both versions and kept the diary free for us. Since these are no-bake, they held their consistency and tasted great! Highly recommend using this option.

Ingredients for No Bake Cookie Truffles

  • 3 boxes of chocolate sandwich cookies (try to find organic)
  • 3 boxes of Organic Cream Cheese or 3 containers of Kite Hill Cream Cheese
  • 1 bag of white chocolate morsels
  1. Place cookies in a large ziploc bag to manually crush (how we did it because it is fun) or place in food processor.
  2. Either crush cookies with the back of a large spoon or pulse in processor.
  3. Once cookies are crushed, transfer to a large bowl and add softened cream cheese.
  4. Incorporate the cream cheese into the cookies. The best way to do this is with clean hands.
  5. Form compact, small balls with the mixture and place on a parchment lined cookie sheet.



6. While the cookie making is taking place, start melting white chocolate in a double boiler on stove.

7. If the chocolate isn’t melting thinly enough, add a tiny bit of oil to it. I used about 1/4 tsp of avocado oil. This keeps it thin.

8. Use a small whisk to drizzle the chocolate over the Cookie Truffle

9. Place the completed truffles in the fridge to chill.

These must stay refrigerated. Enjoy!

    Yum!! These look DELICIOUS and so easy to make! Anything with CREAM CHEESE in it makes my mouth water.
