Healthy and Easy Roasted Pumpkin Seeds

It is a family tradition to carve pumpkins the week before Halloween. Making roasted seeds is another component of this tradition. While the kids finish up the carving and decorating, I get the seeds going. Through a lot of trial and error, I have come up with the best recipe. This healthy and easy roasted pumpkin seed recipe will become your go-to, with only two other ingredients aside from the seeds.

First, you have to clean the seeds. I have finally found a simpler way to do this. Once you scoop the seeds and clean off as much gunk as possible, place them into a large bowl. Pour very hot (not boiling) water over them and let them soak for about 15 minute. Stir them around every now and then and the left over pumpkin will come off.

Next, place the seeds in a thin layer on a towel to dry. I let them lay out for about an hour while we clean up the pumpkin carving mess. The dryer the better on the seeds so if you’d like to let them sit longer, go for it.

You are now ready to get roasting!

Healthy and Easy Roasted Pumpkin Seeds

  • Preheat the oven to 375
  • Line a baking sheet with parchment paper
  • Lay the seeds on the sheet in a thin layer
  • Use refined avocado oil to coat the seeds lightly. I sprinkle it over the seeds and then mix to coat with my hands.
  • Sprinkle the seeds with salt
  • Bake for approximately 45 minutes. Toss seeds every 15 minutes and re-salt if needed
  • I like our seeds a bit more toasted. Adjust time to you liking of doneness.

    Yum! I love pumpkin seeds! This year, we chose to paint our pumpkins, so we have not cleaned the seeds out of them yet. I am excited though because that means I will get to make pumpkin seeds this weekend! Thank you for sharing this recipe!
